Noodles? Yes, please!

I love Korean drama series. It was a serious addiction of mine for many cold winter months. It’s just adorable how in each show, the characters slurp instant noodles as comfort food. It’s cliché. I can imagine how many chronically busy people (students, workers) enjoy a convenient cup of noodles now and again.
But you can make so many dishes with noodles. Let’s stir fry them today. Here is a simple recipe for grand enjoyment.
🍜 Quick noodles with veggies

Ingredients:
300g glass or sweet potato noodles
Mixed vegetables of your choosing (courgette, oyster mushrooms, bell pepper, carrot, onion)
500g smoked tofu or soy-based meat substitute
2-3 cloves garlic
Sunflower or canola oil to grease the pan
For the sauce:
2 Tablespoons soy sauce
1 Tablespoon rice vinegar
1 Tablespoons maple syrup
2 Tablespoons sesame oil
black pepper
Directions
Cook the noodles for two minutes less than instructed on the package (We need them cooked but chewy). Lightly oil a pan and heat it. Add garlic, tofu (or soy meat), vegetables and let them soften up. Mix the sauce ingredients separately. Add the sauce and the noodles to the pan and stir stir stir. Keep stirring until most of the liquid has evaporated. Turn off the heat and serve.
Notes
In the video we stir fried the vegetables separately in a wok but you can also use a deep skillet and cook all the vegetables together for convenience.
